Zucchini Loaf and Recipe

How yummy do these look? They were hot and fresh out of the oven and there’s nothing better than that - which explains why one of them has already been started on! Cut a slice and slather the butter on and yum!

I have to admit I didn’t actually make these myself - my husband did. When I told him I was going to take a photo he teased me, saying “Oh don’t tell me you are going to blog about this?” but I think he was secretly pleased.

It’s his mum’s recipe - all measurements are Australian standard. Let me know in the comments if there is anything you need further info on as I know things have different names in American recipes etc.

Zucchini Nutloaf

3 eggs
2 1/4 cups castor sugar
1 cup oil
2 cups grated zucchini
(or 1 cup zucchini and 1 cup grated carrot)
3 cups plain flour
1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon powder
1 teaspoon bi-carb soda
1 cup crushed walnuts
1/2 teaspoon vanilla essence

Preheat oven to 350 C or 500 F. Line two loaf tins with greaseproof paper.
Beat eggs until fluffy. Add sugar, vanilla and oil and beat until thickened.
Stir in zucchini.
Sift flour and add baking powder, salt, cinnamon and bi-carb soda.
Fold flour etc into zucchini mix. Stir walnuts through.

Bake for 1 to 1 1/2 hours.
